Greek Lentil Salad
Ingredients-
1 pnt cherry tomatoes, cut in half
1/2 carrot, grated
1/2 red capsicum, chopped
1 rib celery, chopped
2 tablespoon parsley, chopped
2 Tbs Lilliput capers
1 400g can lentils drained and rinsed, or 1 cup dried lentils cooked
Oregano
Salt + pepper to taste
Options -
Black sesame seeds for decoration (as pictured)
Red onion, chopped finely
Feta
Kalamata Olives, chopped
Dressing-
1 tbs red or white wine vinegar
2 tbs EVOO
Optional
1 tsp Dijon mustard
1 tsp honey
Prepare your dressing and add!
