🇬🇷🥗Greek Style Lentil Salad
Today I was reminded of this awesome easy recipe that is basically a Greek style salad with lentils. It’s always a hit, especially if you have vegan guests. I paired it with some chicken tonight for dinner.
You can make it yours by adding, green beans, pomegranate, rocket, couscous, freekeh, other herbs like coriander or mint, spices like cumin or paprika. The options are endless🙌, but here is my simple satisfying option.
Ingredients~
250 g cherry or baby roma tomato, halved
1 Lebanese cucumber, chopped
1/2 -1 red onion or spring onion, chopped
1 red capsicum roasted, sliced. I used 4 baby caps. (drizzle with oil and bake at 220 for 10 -15 mins)
10 olives, pitted and halved
Handful parsley, chopped
1 tsp oregano
400g tin Lentils , rinsed and drained well
Feta
Dressing~ (mix it all together)
1 garlic clove, crushed (optional)
1.5 T Dijon Mustard
1 T Honey, or less
2 T Red vinegar, or other vinegar
2 T Extra virgin olive oil
Salt and pepper
Or you can just go for a lemon and oil mixture 🍋
