🥦Roasted Broccoli Pasta
🥦 RoAsTeD BrOcCoLi PaStA 🎬 Another take on 1 of my favourite dishes, that mum used to make 35 years ago. Roasting the broccoli takes it to new heights 🤤
Note that I use 3-4 broccoli heads, where most recipes ask for just 1 🙈 #eatyourgreens

Ingredients
- 3 large bunches broccoli, trim stems & cut into florets
- 1/4 cup extra virgin olive oil
- 400g spaghetti
- 4 cloves garlic, crushed
- 1/2 lemon, juice and zest
- Salt and pepper, to taste

- 1/3 cup bread crumbs (about 1 large slice)
- 1 red chilli, chopped 🌶️
Method
- Heat oven to 220C
- Place broccoli on a baking tray in one layer
- Drizzle 2 tablespoons olive oil + some salt, and toss to coat.
- Roast in oven for 15 to 20 minutes, or until tender & a little brown.
- Put a pot of salted water & boil your spaghetti. (Keep some pasta water )
- Toast your breadcrumbs in a large pan with a tablespoon of oil. Set them aside.
- Clean the pan and the remaining olive oil & soften & lightly brown the garlic, and chilli ( at this stage, if you like, you can add 2-3 anchovies and stir until dissolved )
- When done, turn off the heat, grate some lemon zest into the mix.
- Stir in your roasted broccoli, bread crumbs followed by the cooked pasta. Coat everything in the garlic mixture.
- If the mixture seems dry, add some of the pasta water , a few splashes at a time
- Serve the broccoli pasta with some of the remaining bread crumbs & lemon juice over the top.
- Finish with parmesan, or your favourite cheese.
