Ground Cinnamon is the preferred form of the spice to use in cooking . Cinnamon powder is obtained from the inner bark of a tropical tree that has been ground to produce a fine powder. It has a brown colour and a warm, mild and sweet flavour favoured for use in winter and the traditional festive season, as it imparts a warm feeling. As it is difficult to grind the whole quills, it is recommended that ground cinnamon is bought separately for use in dishes where the powdered form is desired. Its warm flavour and aroma also make it a favoured spice in chai tea, Middle Eastern curries and rice dishes.
